Julienne

Julienne are slender matchsticks of vegetables that are most often used as a garnish. This classic cut was created to showcase the cook’s knife skills and can make something as simple as a carrot stick seem sophisticated. Dimensions for a julienne are approximately ⅛ x ⅛ x ½ an inch. A julienne is also the first step toward creating a brunoise.
